Ingredients
2 medium sweet potatoes, peeled and cubed
2 tbsp neutral oil
1/2 tsp cinnamon (optional)
1 lb ground beef (lean preferred)
2 tbsp taco seasoning
1 tbsp tomato paste
2 cups cottage cheese
2 avocados, cubed or sliced
4 tbsp hot honey (or to taste)
Salt and pepper to tasteInstructions
- Air Fry Sweet Potatoes: Toss the cubed sweet potatoes with oil, salt, pepper, and cinnamon if using. Spread in a single layer in the air fryer and cook at 400°F for 10–15 minutes, shaking halfway, until golden and cooked through.
- Brown the Beef: Cook ground beef in a large skillet over medium-high heat. Break it apart as it cooks. Stir in tomato paste and sprinkle on taco seasoning. Cook, stirring occasionally, until fully browned and cooked through. Set aside.
- Assemble the Bowls: Divide sweet potatoes and beef evenly among four bowls. Top each with a scoop of cottage cheese and sliced avocado. Drizzle generously with hot honey and serve immediately.
Notes
For meal prep, store each component separately. Reheat sweet potatoes and beef before assembling. Add avocado and cottage cheese fresh.
Swap ground beef for ground turkey for a lighter option.
Mike's Hot Honey or any chili-infused honey works well here.
Full-fat or 2% cottage cheese gives the best creamy texture.Nutrition
