Ingredients

650 g chicken breast, skinless and boneless (about 4 pieces) 50 g plain flour 1 tbsp olive oil 3 garlic cloves, peeled and crushed 150 g sun-dried tomatoes, drained 1 tsp dried oregano 2 tsp paprika 150 ml double cream 200 ml chicken stock 50 g parmesan cheese, grated 15 g fresh basil leaves 1/2 lemon, juice only Sea salt and freshly ground black pepper

Instructions

  1. Coat the chicken: Dust all chicken breasts evenly in the plain flour and shake off any excess.
  2. Sear the chicken: Heat olive oil in a large deep frying pan over medium heat. Add chicken breasts and cook for 5 minutes per side until golden, then remove to a plate.
  3. Build the base: Turn the heat to low. Add garlic, sun-dried tomatoes, oregano, and paprika to the pan. Stir for 3 to 5 minutes until garlic softens and turns fragrant.
  4. Add the sauce: Pour in the double cream and chicken stock. Add the grated parmesan and season well with salt and pepper. Stir everything together to combine.
  5. Finish the chicken: Return the chicken breasts to the pan and nestle them into the sauce. Cover with a lid and cook for 5 minutes, then flip the chicken and cook covered for another 5 minutes.
  6. Check and serve: Confirm the chicken is fully cooked through (165°F / 74°C internal temp). Remove from heat, scatter over the fresh basil leaves, and squeeze over the lemon juice. Serve immediately.

Notes

Cooking time: This will vary slightly depending on the thickness of your chicken breasts. Use a meat thermometer and look for an internal temperature of 165°F (74°C). Lemon juice: Add the lemon juice off the heat to prevent the sauce from curdling. If it does separate slightly, remove the chicken to a plate and whisk the sauce back together quickly.
