Ingredients

1 tablespoon unflavored gelatin powder 1/2 cup cold water 1 cup hot herbal tea (green tea, chamomile, or ginger) 1 tablespoon lemon juice 1–2 teaspoons honey (optional) 1 teaspoon apple cider vinegar (optional) Pinch of cinnamon or turmeric (optional)

Instructions

  1. Bloom Gelatin: Sprinkle gelatin evenly over cold water in a small bowl and let sit undisturbed for 2 to 3 minutes until the mixture becomes thick and spongy.
  2. Dissolve Gelatin: Pour hot herbal tea over the bloomed gelatin and stir steadily for 1 to 2 minutes until the liquid turns completely clear with no remaining granules.
  3. Add Flavor: Stir in lemon juice, apple cider vinegar, honey, and any optional spices until evenly combined throughout the liquid.
  4. Pour Into Mold: Transfer the liquid into silicone molds or a lightly greased shallow glass dish for easy removal after chilling.
  5. Chill Gelatin: Refrigerate for at least 2 hours until the gelatin is completely firm and holds its shape cleanly.
  6. Cut Cubes: Remove from the mold or slice the set gelatin in the dish into small 1-inch squares and transfer to an airtight container.

Notes

Use silicone molds for effortless removal and uniform cube sizes. Keep cubes small, about 1 inch square, for better portion control. Store in an airtight container in the fridge for up to 5 days. Avoid adding excess sweetener to keep the calorie count low. Do not freeze as this breaks down the gelatin structure and makes cubes watery. Vary the herbal tea base weekly to keep the habit fresh and enjoyable.
