2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
1 1/2 cups water
2 pounds cod, hake, or other white fish
Instructions
- Step 1: Preheat the oil to 350°F in a deep fryer or medium saucepan.
- Step 2: In a medium bowl, whisk together flour, cornstarch, baking powder, salt, and cayenne pepper.
- Step 3: Add cold water and whisk until light and foamy.
- Step 4: Pat the fish dry with a paper towel.
- Step 5: Dip each piece into batter and let excess drip off.
- Step 6: Fry 2–3 pieces at a time for 3–4 minutes or until golden.

Notes
Keep batter cold for best texture.
Hold the fish in the oil a few seconds before letting go to prevent sticking.
Use a wire rack instead of paper towels to maintain crispiness.
