Ingredients

12 ounces bowtie pasta 1½ pounds boneless skinless chicken breasts, cut into pieces 2 tablespoons olive oil 3 tablespoons unsalted butter, divided 1 tablespoon Cajun seasoning 1 teaspoon garlic powder Salt and pepper to taste 1 small onion, diced 4 cloves garlic, minced 2 tablespoons all-purpose flour 1 cup chicken broth 1½ cups heavy cream 4 ounces cream cheese, softened 1 cup shredded provolone cheese 1 cup shredded mozzarella cheese ½ cup grated Parmesan cheese Chopped parsley for garnish

Instructions

  1. Cook Pasta: Boil bowtie pasta in salted water until al dente. Drain and set aside.
  2. Season Chicken: Coat chicken pieces with Cajun seasoning, garlic powder, salt, and pepper.
  3. Sear Chicken: Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken and cook for 6–7 minutes until browned. Remove and set aside.
  4. Sauté Aromatics: In the same skillet, melt remaining butter, add diced onion, and cook until translucent. Add garlic and sauté for 30 seconds.
  5. Make Sauce Base: Sprinkle flour over the onion mixture, stir for 1 minute, and whisk in chicken broth and heavy cream until smooth.
  6. Melt Cheeses: Stir in cream cheese, provolone, mozzarella, and Parmesan until melted and smooth.
  7. Combine Everything: Return chicken and pasta to the skillet, toss to coat evenly, and simmer for 2–3 minutes.
  8. Serve: Garnish with chopped parsley and extra Parmesan before serving.

Notes

Use freshly shredded cheese for the smoothest sauce texture. Add a splash of pasta water if sauce thickens too much when reheating. Swap chicken with shrimp or mushrooms for variations.
